Food is a powerful tool to engage students and the general public in a wide variety of scientific concepts and methods. This discussion will draw on examples from my Harvard College course on Food Fermentations, soon to be launched on HarvardX, and the Science and Cooking program at Harvard. We will explore design and implementation, as well as learning outcomes based on surveys and learners’ assessments.
